Saving It For Later

I love growing our own herbs. Most of them did ok, but the basil did amazing.
This is the plant after a lot of trimming.

First I made pesto. I put a little on my turkey sandwich and froze the rest.

It will be great for pizzas or pasta throughout the winter.

Then I froze the rest like this.
Washed the leaves in a salad spinner.
 Stack the leaves and chop.
 Put in ice cube trays.
Pour water into each cube. I've also seen olive oil used instead of water. Olive oil would probably be better.
Once they were frozen I bagged them up. I can use these later in sauces or soups.
We also had a lot of jalapeno peppers that we were not eating. I decided to chop them up and freeze them as well. I hate to waste part of our garden. I'll do the same thing with the bell peppers if I don't use them soon.
The other bowl is part of an onion I chopped but was not going to use. I froze it too.

Tip: Don't chop 15 jalapenos then rub your eye. It really hurts, and it can ruin a contact.

Fair Night

Our Monday night Bible study took a break from the normal meet place and decided to go to the fair.
I enjoyed a healthy dinner of a corn dog and corn nuggets...
and FRIED SNICKERS! This was a snickers battered in funnel cake batter and fried. I would've had another one if it wouldn't exceed my caloric intake for the month.
I also had a few bites of Nick's chicken on stick with pickles and onions stacked in. Yum.
Watching all the rides was scary. I thought the rides would fall apart at any second.
And the worst part is that I used to love this kind of stuff.
This ride had tiny children on it. It was making me nervous.
We can't take Millie when she is older because she will want to ride all these crazy contraptions.
We enjoyed our night at the fair.  Millie loved the lights and the animals. She wouldn't get out of the petting zoo even though she wasn't actually petting any animals. And I'm glad I got my fried food fix for the week.
Go get your fried snickers at your local fair. I highly recommend it!

Duct Taped Diaper

It has come to this...

Duct Tape on the diaper.

We woke up to a diaper-less baby this morning. And we had a to clean up a big mess before I even had a sip of coffee.

I've heard that my grandfather had to do this me because I did the exact same thing.

Let's hope this works.
Have a good week.

Beach 2012- Part 2

The last day at the beach was rainy. We enjoyed ice cream cones, football, coffee, and court-bullion. I also finished my book. Yes, I read an entire book on vacation.

We loved staying on the ground floor. I recommend it with children. It was great to let them out the door and play. It helped that Lovie brought riding toys from her house. It was also easier to come and go from the beach.

The week went by too fast. We all had a really good time. I wish we could go back sooner rather than later.

Now back to reality of groceries, laundry, teeth coming in, tutoring, and cooking for ourselves.
